| 内容記述 | The purpose of this paper is to survey the history of western food culture in Japan. The process of introduction is divided into three stages. This paper deals with the first two stages, i.e. the period from the mid-16th century to the mid-17th century and the period from the 1850's to the 1930's. Especially it focuses on the latter: from the last days of Tokugawa-Shogunate to the beginning of the Showa era. In conclusion we can point out that western food culture was transformed and adapted to Japanese food culture, and the new style of Japanized western dishes （so-called "Youshoku"） was created and spread among the middle classes in the urban centers of modern Japan. |
